How to Make Mushroom Kootu

To make Mushroom Kootu you need-

Ingredients:

Channa dal- 300gm

Mushrooms – 250gm

Cumin- 1tbsp

split black gram- 1tbsp

Chopped onions- 1/2cup

Curry leaves- 2springs

Green chilies (slit) – 5

Coconut- 1

Salt- to taste

oil- 75ml

 

Method-
      Boil channa dal with enough water and 1 teaspoon oil. Grind coconut with a little water into a fine paste. Heat oil in a pan, add cumin, and black gram and fry. Add green chilies and curry leaves. Now add chopped onions and brown lightly. Add ground coconut and simmer.

Meanwhile slice mushrooms and sauté till cooked. Add mushrooms to cooked coconut mixture. Pour mixture into dal, mix well, add salt, simmer for 2 minutes and take off fire.

How to make Banana Drop Scones

To make Banana Drop Scones you need:

Ingredients-

Refined  flour – 1cup

Sour curds – 1/4 cup

Warm water- as required

Sugar- 2tbsp

Bananas – 2

 

Method-

1. Mix flour, curds, warm water and sugar into a thick butter.

2. Set aside till batter becomes very spongy.

3. Melt a little butter in a frying pan.

4. Make a small circle 5cm (about 2”) diameter of  batter.

5. Top with sliced bananas slices and over with more batter.

6. When properly browned on one side, turn over and brown other side.

7. Now serve with honey!Thumbs up

Baked Fish in Sour Cream Sauce

 

To make a Baked Fish in Sour Cream you need:

Ingredients-

  Fish-   1KG

Sour Cream Sauce- 300ML

Eggs (Hard Boiled) – 2

Refined Flour – 2tbsp

Potatoes- 680gm

White mushrooms – 225gm

Butter- 115gm

Salt and pepper- To taste

 

Method-

1. At first clean and skin fish, cut into 4 portions.

2. Cover with flour and fry on both sided for a few minutes in 60gm butter.

3. Put into a buttered oven dish and lay slices of half egg on each portion.

4. Slice mushrooms, fry them lightly in 60gm butter and pile over eggs.

5. Parboil Potatoes, peel and slice. Now fry in remaining butter till golden brown and put around fish.

6. Sprinkle all over with salt and pepper.

7. Pour sour cream sauce over fish.

8. Cover all ingredients with grated cheese and bake in a moderate over for 20 minutes.

 

Sour Cream Sauce

Ingredients-

Sour Cream – 150ml

Butter – 2tbsp

Refined flour- 1tbsp

Stock- 150ml

Salt- to taste

Method-

1. Make butter.

2. Blend with flour and gradually dilute with warmed meat or vegetable stock.

3. Add sour cream and salt to taste. Mix well and simmer gently for 5-10 minutes.

4. Serve with liver rissoles, roast game, vegetable or fish.  Open-mouthed smile
